Ingredients

  • 1 cup quinoa, rinsed
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/2 cup kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package directions. Let cool to room temperature.
  2. While quinoa cools, whisk together all dressing ingredients.
  3. In a large bowl, combine cooled quinoa, cucumber, tomatoes, red onion, olives, and parsley.
