Ingredients

  • 2 large eggs
  • 2 egg yolks

  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • Butter and cocoa powder for ramekins

Instructions

  1. Preheat oven to 425°F (220°C). Butter four 6-oz ramekins and dust with cocoa powder.
  2. Melt chocolate and butter together in a microwave or double boiler. Stir until smooth.
  3. Whisk eggs, egg yolks, and sugar until thick and pale, about 2 minutes.
  4. Fold the chocolate mixture into the egg mixture. Add flour and salt, fold gently.
  5. Divide batter among the prepared ramekins.
  6. Bake for exactly 12-14 minutes — the edges should be firm but the center still jiggly.
  7. Let cool for 1 minute, then invert onto plates. Serve immediately.
